Eggsquisite Brunch Camp at Haverford College: Breakfast Favorites, Baking, and Kitchen Confidence

There’s something special about gathering around the breakfast table, and this week our junior chefs discovered that brunch is about much more than pancakes and eggs. During Eggsquisite Brunch at Haverford College, campers spent the week whisking, flipping, baking, frying, and sautéing their way through an exciting menu of sweet and savory favorites while building valuable culinary skills and confidence in the kitchen.

One of the highlights of this week's camp was welcoming back so many familiar faces. We loved seeing returning campers return for another summer of cooking adventures, and it was especially exciting to watch them bring along siblings and friends to share the Create-a-Cook experience. New friendships were formed, teamwork flourished, and the kitchen was filled with laughter from the very first day.
Under the guidance of Chef Carisa, junior chefs learned essential cooking techniques including proper knife safety, egg cookery, sautéing, baking, frying, and time management while working together in teams. Instructional Assistants I'Jhier and Spring encouraged campers throughout the week, helping every junior chef gain confidence while creating restaurant-worthy dishes from scratch.

Our culinary menu celebrated everything brunch has to offer. Campers prepared hearty Loaded Breakfast Burritos with Crispy Hash Browns, crispy Chicken and Waffles, flavorful Frico Egg Smash Tacos served with Spanish Rice, creative Breakfast Flatbreads with Smashed Breakfast Potatoes, and personalized Breakfast Strata Bars, where each camper customized their own savory baked breakfast creation using a variety of fresh ingredients.
In baking and pastry, the kitchen smelled incredible all week long as junior chefs created Cream Cheese Stuffed Cinnamon Roll Muffins, moist Sour Cream Coffee Cake with Orange Honey Glaze, homemade Amish Apple Fritter Bread, soft and chewy Banana Pudding Cookies, and colorful DIY Dot Cakes that allowed campers to showcase both their baking skills and creativity.
This week also introduced campers to several exciting pieces of kitchen equipment and new culinary techniques. Junior chefs safely learned how to use waffle irons to create perfectly crisp waffles and had the opportunity to cook with deep fryers, gaining firsthand experience with proper frying techniques, temperature control, and kitchen safety under close instructor supervision. They also learned how to roast fresh bell peppers from scratch, preparing them for both the Breakfast Flatbread with Smashed Breakfast Potatoes and the Individual Breakfast Strata Bar. These hands-on experiences helped campers better understand professional cooking methods while reinforcing the importance of working safely, confidently, and creatively in the kitchen.
Beyond the delicious food, the week focused on building lifelong skills. Campers strengthened their communication, practiced teamwork, learned how to organize their workspace, and discovered that cooking from scratch can be both fun and rewarding. Watching returning campers mentor newer friends and siblings created an encouraging environment where everyone felt comfortable trying new techniques, developing new skills, and challenging themselves throughout the week.
By the end of the week, every junior chef headed home with an impressive collection of homemade brunch favorites, new kitchen knowledge, and plenty of confidence to recreate their favorite recipes at home. It was a week filled with smiles, delicious aromas, and unforgettable memories that truly made Eggsquisite Brunch one of the highlights of the summer.
