A Harvest to Remember: Haverford Wraps Up the Summer with Late Summer Harvest!

Our final week of the 2025 season at Haverford College was a true celebration of flavor, creativity, and seasonal cooking during Late Summer Harvest! As summer slowly gives way to fall, our junior chefs dove into a menu that highlighted the best of the season—juicy tomatoes, crisp greens, sweet berries, and hearty vegetables—all while practicing essential kitchen skills and having a ton of fun.
Chef Lindsay guided campers through a lineup of savory dishes inspired by late-summer produce and comforting flavors, including:
Pasta alla Norma – a Sicilian favorite with roasted eggplant and rich tomato sauce
Roasted Garlic White Mac and Cheese – creamy and layered with flavor
Beef Tostadas – topped with guacamole, refried black beans, and chipotle sour cream
Vegetable Stir Fry with Homemade Stir Fry Sauce – fresh, crisp, and full of color
Personal Pizza with Housemade Sauce – a camper favorite that let creativity shine
On the sweeter side of the kitchen, Chef Carisa led junior chefs through a flavorful collection of harvest-inspired desserts and snacks:
Apple Cinnamon Blondies – chewy, spiced, and perfect for fall
Blueberry Peach Scones – buttery and bursting with summer fruit
Plum Streusel Cake – a rustic, sweet-tart treat with a crunchy topping
Chocolate Chip Cookies with Sea Salt – warm, gooey, and topped with the perfect salty finish
Berry Yogurt Parfaits with Granola – a refreshing, layered snack or breakfast
Each day in the kitchen was filled with teamwork, focus, and the kind of joy that comes from creating something delicious from scratch. Campers chopped, stirred, and plated their way through a menu that celebrated the natural beauty of cooking with what’s in season.
While some of our chefs were new this week and others wrapped up multiple sessions with us, Late Summer Harvest offered a heartfelt close to an incredible summer. We’re so proud of all our campers—for their curiosity, courage, and creativity in the kitchen—and so grateful to the families who shared their young chefs with us.
